Italian Sausage Stuffed Peppers Recipe

Stuffed peppers have been around since long before me, but these giardiniera inspired stuffed peppers are my adult take on a childhood classic. I love these things, even when you make stuffed peppers that don't quite turn out great, they're still good enough to eat. Don't be afraid to make these because they look too difficult, they really are just stuffed peppers. You make a mix to put in the peppers and then you bake them. It's really not as bad as it seems; you can do this!
You can use red, yellow, green, purple...any bell pepper really that you want. I pick up whatever is on sale, or if it's for a dinner party I get multiple colors so they make a gorgeous display.You can add cheese to the mix if you have a stubborn husband that won't eat anything without cheese, or make them just as I do for an incredible, hearty meal.
