Most every pizza joint in Chicagoland offers some variation of a BBQ Chicken Pizza. Though it's not my go to, this version is fantastic. The sweet butterwine shallots, tangy green onion, seasoned chicken, fatty smoked bacon, and sharp and creamy fontina cheeses all play a part in making the flavors roll around in your mouth. This group of flavors goes best on my 'Classic Crust' recipe made same day/next day, or fermented for 5-7 days. I feel that the more offensive fermentation flavors of a 2-4 day ferment take away from this flavor profile, but to each their own.
