*To make smoked giardiniera simply strain your giardiniera and put the oil in one aluminum pan and the vegetables in another. In the cold zone of your smoker you will smoke the oil for 1 hour, stirring every 15 minutes, and the vegetables for a half hour, stirring once in the middle. Cool separately and then combine back into the gallon. Refrigerate your newly smoked giardiniera and use as you would our giardiniera that isn't smoked! I was the first to use smoked giardiniera but Mitch at Wrigley BBQ on Broadway actually smokes our giardiniera in house and uses it on sandwiches. The ONLY smoked giardiniera in the city and probably the first used on menu!
