My take on a Nashville classic, this Chicago inspired hot chicken recipe is my take on what Nashville Hot Chicken was supposed to be. Loaded with heat, moist chicken, sweet crispy slaw, this sandwich is something you won't find anywhere else.
A simple brine of your chicken in your favorite beer (I use Old Style) & fortifying the flavors of beer, chili powder & heat, & sweet spices, you can be among the first to make this chicken. This sandwich is a great mix of heat, sweet, freshness & acid. The chicken holds up well in a low heat oven so you can make these in batches for friends & parties.
If you don't want to make sandwiches, you can cut your chicken into 'tenders' or 'fingers', toss in oil mix, & serve over white bread with pickles. Dip in a sweet ranch or barbecue sauce or drizzle honey over your fried pieces.

As you might imagine, we've eaten a lot of burgers growing up in the Midwest. With thousands of options around, it gets old going out to eat & grab a burger, so we started staying in more & cooking our own. One night we had a bunch of cold cuts & cheeses left around from some other recipes we were working on so we made a few different burger recipes.
Here's some things I learned about burgers over the years. By far, my favorite style is two thin patties, not the thick pub burger style. Pressing your patties into a skillet or cast iron pan helps create that flavorful crust that I love. Another technique that helps to crust your burger patties is salt. Even if you don't use a seasoning blend (like our Steak, Burger, & Fries seasoning) make sure you use some salt!
Another benefit to using two thin patties instead of one larger pub style patty is that you can layer your flavors. You can put cheese between the patties (and even on the bottom layer between the bun & the bottom patty). Layering your flavors helps to fortify flavors in every bite of your burger. When you're going to create a burger like this, prep all your toppings first, you won't have time to prep while your frying your patties.
Melty cheese is one of the best & most overlooked piece of a great burger. You can 'pre-melt' your cheese a bit in your skillet & then use a spatula to get your cheese onto the burger.
Lastly, don't get boxed in by thinking you need a brioche or hamburger bun. I love Old World Italian bread; I love the rich flavored crust, the dense & spongy interior of the bread, the uniformity in thickness of the slices, & the nooks & crannies of the surface area to take in flavor. You can butter & toast your bread in an oven, or right in your heated skillet. Simply dab some butter into the skillet, then put your bread into the skillet & heat until you start to get some color & crust.

Rosette cookies are incredibly thin, crispy, powdered sugar covered snowflakes of sweetness. Such easy cookies to make, but you need a special tool to make them (posted below). Rosette cookies are fried (traditionally in lard) but you can use any oil. I use the fat trimmings when we make Italian sausage to render lard & keep it in a mason jar in the fridge for at least a year. Anyway, this recipe is so simple & it's a great tradition to start with your family & friends! Simply dust with powdered sugar or flip & fill the hollow back with jam or jelly.
A little bit of my history with these treats. Growing up in the Chicago area there was this weird tradition with a lot of people making these Scandinavian region Rosette cookies around Christmas time. I related these cookies with Christmas growing up, but I have no ties to Scandinavian heritage. The more people I've met around Chicago, the more I realized these little, crispy, sugary cookies are popular around the holidays to a lot of Chicagoans.
My grandma Annette used to make them every Christmas Eve for our family parties in Cicero. She passed when I was younger, but I remembered these cookies from my childhood, so I was able to get the recipe from family. Italian Beef Sandwiches started as a more efficient way of serving beef roasts to more people from the same roast. It's origin is highly debated (more likely just unknown, but it's Chicago so a few companies claim to be the 'first') but no matter how you look at it, it's a Chicago sandwich & it's friggin' delicious! Don't be afraid making this dish, the more you make it, the better you get at the techniques that alter the outcome of your Italian Beef.
In Chicago the roast is cooked rare/medium rare & sliced incredibly thin. The slices are then finished off in a low simmering gravy & piled onto the sandwich. If you don't have a slicer (as many of us don't) you can make this roast in a crock pot or using the recipe; if you use this recipe simply cook your roast all the way until your temperature is 195-200 degrees so it will shred with minimal effort. Your sandwich won't look exactly like the one below, but still be incredibly delicious!
